These gluten free raspberry oat squares are built on a layer of buttery shortbread, a just-right tart raspberry filling, and then topped with a struesel made with more butter, brown sugar, pecans, and oats.

I sell them in a single 8x8 sized batch and can cut into as many squares as you like. Pro tip? When you get them, individually wrap in plastic, put in a zipper-top bag and freeze. Take one out about 30 minutes before you want a snack and enjoy!
