Want a corn muffin that tastes like corn, actual sweet summer corn, instead of yellow grit?

 

I make my corn muffins using sweet corn grown right out near me in Logan County, CO.  These muffins are sweet, moist (not dense), and bursting with corn flavor.

 

They're absolutely ready to be put with chili or barbecue.  They're also great heated up in the morning for breakfast.  Couple serving suggestions?  Pair this with maple butter or (and try it before you doubt it), slather on some apricot jam.  

 

A full dozen costs XXXXXXX dollars and is subject to my ability to get sweet corn.  I always buy extra and freeze it right after cutting off the kernels, but by late winter, I'm usually out til the end of next summer when I get more.
